These recipes have been adapted for home use. The dry rubs and sauces can be purchased for the authentic Anntony's flavor.

Caribbean Beef Stew

2 lbs. cubed beef
2 T. vegetable oil
½ medium onion, chopped
1 tomato, diced
1 t. brown sugar
2 cloves garlic
1 t. black pepper
1 t. salt
2 carrots, peeled, chopped
½ cup Anntony's All Purpose Sauce

Method
Heat oil, add brown sugar, stirring until sugar is melted and darkened. Add onions and garlic, sauté until tender. Add meat and ½ cup Anntony's All Purpose sauce (to taste). Brown meat for 10 minutes, stirring continuously. Add water and simmer, covered, until meat is tender (about 1 Hour). Add carrots and tomato, simmer for 15 minutes. Serve over cooked rice or noodles.


Shrimp In Island Sauce

2 cups shelled, deviened shrimp
1 medium onion, chopped
1 medium tomato, diced
2 cloves garlic, minced
½ t. black pepper
1 green pepper chopped
1 t. salt
1 ½ t. Anntony's All Purpose Dry Spice
¾ cup boiled rice
butter to saute

Method
Sauté onions and garlic in butter until tender. Add shrimp, salt, pepper, green pepper dry spice and tomato. Simmer about 15 minutes. Serve over cooked rice


Chicken in the Oven

1 medium onion, finely chopped
2 cloves garlic, minced
2 cups Anntony's Caribbean All Purpose Sauce (Jamaican Jerk can be substituted)
1 T. butter
1 whole chicken, cut into pieces
½ cup white vinegar
1 T. Anntony's All Purpose Dry Rub

Method
Combine all ingredients except chicken and dry rub to make a marinade. Rub chicken with dry rub. Add chicken to marinade and let stand refrigerated in baking pan for over 1 hour. Remove marinade from chicken and bake chicken at 350 degrees for 1 hour. Baste with additional All Purpose sauce after 30 minutes. Remove chicken from marinade before serving.


Roasted Red Snapper

4 fresh snapper cutlets
1 T. butter
½ T. Anntony's All Purpose Sauce (Jamaican Jerk can Be substituted)
½ t. black pepper
Salt to taste
Ketchup for color
1 clove garlic, minced

Method
Place fish in lightly greased dish. Combine butter, ketchup, Anntony's All Purpose Sauce and seasoning. Brush mixture on fish. Bake 20-25 minutes at 350 degrees. Serve at once.


Caribbean Salsa

1 large tomato, chopped
1 large onion, chopped
1 T. Hot Pepper Sauce (Matouk's)
½ cup whole kernel corn (if desired)
1 T. Anntony's Caribbean All Purpose Sauce
3 oz tequila
3 oz. Spiced rum

Method
Toss all ingredients together & serve chilled with Chips or Salty Plantains


Black Beard Meatballs

1 lb. Ground beef
1 t. black pepper
1 t. salt
2 cloves garlic, minced
½ onion, minced
2 t. Anntony's All Purpose Dry Rub
½ cup Anntony's All Purpose Sauce (Jamaican Jerk can be substituted)

Method
Mix all ingredients in medium bowl. Roll beef into one-inch balls. Brown in skillet until cooked.
Serve with Anntony's All Purpose sauce over meatballs. For large parties, make three batches and slow cook in slow cooker, simmering with Anntony's All Purpose sauce.


Roasted Island Lobster Tail

4 Lobster tails
2 T. lemon juice
¼ cup minced garlic or garlic powder
¼ t. thyme
½ cup white wine
4 T. butter
½ cup Anntony's All Purpose sauce

Method
Prepare tails by making slits on the upper surface of shells. Marinate lobster tails with 1 t. lemon juice & ½ T. Anntony's All Purpose sauce and ½ cup water for 1 hour in refrigerator covered. Mix all seasonings with remaining Anntony's All Purpose sauce. Place in baking pan. Bake in oven at 350 degrees for 25-30 minutes. Serve with hot butter and lemon wedges.


Curried Chick Peas

19 oz. can chick peas
1 onion, chopped
2 tsp curry powder
1 garlic clove, minced
Salt & pepper to taste
1 tsp hot pepper sauce
1 tbsp oil
½ cup Anntony’s Jerk Sauce

Method
Drain chick peas, retain ½ cup of liquid. Saute onion and garlic in oil. Add curry powder, cook gently for 1 minute. Add chick peas to onion mixture, fry for 5 minutes. Add remaining ingredients simmer gently for about 15 minutes. Serve as hot as a vegetable.


Jerk Spicy Cucumbers

2 large cucumbers, peeled
1 tsp salt
1 minced hot pepper
1 tsb lime juice
½ cup Anntony’s Jerk Sauce

Method
Cut cucumbers in half lengthwise and seed by scraping a small spoon down the center. Slice crosswise. In bowl, salt cucumber slices, mix with other ingredients and let stand for ½ hour. Drain off liquid and serve.


Jerk Chicken

1 onion grated
2 garlic cloves, minced
2 cups Anntony’s Jerk Sauce
1 tbsp butter or margarine
2 lbs chicken pieces

Method
Combine all ingredients except chicken to make marinade. Add chicken, toss well and marinate for 3 hours in refrigerator. Bake chicken in marinade in 350 degree oven for 1 hour or until cooked.


Caribbean Stir Fry Vegetables

4 large zucchini
4 medium carrots
1 medium red pepper
¼ medium head red cabbage
¾ cup Anntony’s Jerk Sauce
1 tbsp prepared mustard

Method
Cut zucchini, carrots, red pepper and green pepper into thin strips. Shred cabbage. Mix together and cook until tender. In a small bowl, combine salt, mustard and Anntony’s Jerk Sauce. Add mixture to vegetables and toss well. Serves 6-8 people.


Grilled Jerk Steaks

2 New York Strip steaks
½ cup Anntony’s Jerk Sauce

Method
Marinate steaks in Anntony’s Jerk Sauce. Place steaks on grill and baste to taste.


Caribbean Jerk Meatballs

1 lb ground beef
1 tsp black pepper
1 tsp salt
½ onion, minced
2 cloves of garlic
½ cup Anntony’s Jerk Sauce

Method
Mix all ingredients in medium bowl. Roll into one inch balls. Fry in cooking oil until done. Serve with Anntony’s Jerk Sauce.


Plantain Cakes

3 hard yellow plantains
1 tsp salt
2 tsp butter or margarine
1 tsp baking powder
Oil for deep frying

Method
Peel the plantains and cook in water until tender, about 30 minutes. Chop plantain coarsely and pound and mash until smooth or process in a food processor. Add salt, pepper, butter and baking powder. Mix well and shape into cakes about 1” in diameter. Heat oil to 365 degrees. Deep fry plantain cakes until light brown. Drain on paper towel. Serve hot with meat or fish.
